A healthy single serve chocolate chip cookie that is not only paleo but vegan too! It is super gooey and moist, full of melt in your mouth goodness.
Sometimes you don’t want to make a whole batch of cookies, enter healthy single serve chocolate chip cookies. These are perfectly gooey in the center and melt in your mouth. Plus, if you wanted you could easily double or quadruple the recipe! But what I really love is that they have 18 grams of fiber, 4g net carb and lots of healthy fats that help you feel satisfied, even with just one.
Single Serve Chocolate Chip Cookie (Paleo, Vegan)
Servings: 1
Ingredients
1/2 tbsp coconut oil
2 tsp coconut sugar (or monk fruit)
1 tsp ground flaxseed
1 tsp water
1/8 tsp baking soda
pinch himalayan salt
1/2 tsp blackstrap molasses
3 tbsp almond flour
1 tbsp chocolate chunks or chips
Instructions
Preheat oven to 350F.
Mix together the ground flaxseed and water, set aside.
Combine the rest of the ingredients, except the chocolate chunks, in a bowl until smooth.
Fold in the chocolate chunks.
Bake in the oven for 12 minutes.
