Savoury “Oatmeal” Bowls (Paleo, Vegan)

For these recipes, I took my usual paleo oatmeal base and put a savory spin on it! In general, oatmeal is neutral in flavour, so don’t feel limited to only sweet topping possibilities. These make it extra fun and also an option to have not only at breakfast but for lunch or dinner too.

Savoury "Oatmeal" Recipes (paleo)

Ingredients

Paleo Porridge Base

  1. 3/4 cup coconut flour

  2. 1/4 cup ground flax

Paleo Porridge

  1. 1 cup paleo porridge mix

  2. 2 cups bone broth (if vegan do a vegan broth)

  3. 1 cup almond milk

Avocado Toast

  1. 1/2 avocado

  2. handful pea shoots

Mushroom Tahini

  1. 1/2 cup cooked mushrooms

  2. 1/2 cup cooked spinach

  3. 1 tbsp tahini

Vegan Caprese

  1. 1/4 cup tomatoes

  2. 1 tsp pesto

  3. 2 tbsp cashew ricotta

Instructions

Paleo Porridge

Combine all ingredients into a pot over medium heat and cook until thick, about 3 minutes.

Add desired toppings!
