These are healthy snacks you need to try because not only are they delicious but they are easy to make too! Plus, they are paleo, gluten-free and vegan.
When I am looking to have a snack I want to it to be balanced in protein and healthy fats so that not only am I kept full but my blood sugar stays in check. So here are 3 healthy snacks that have been staples for me lately.
Paleo Chocolate Pecans
These pecans are enrobed in a paleo chocolate and are the perfect snack. Grab a handful to nosh on or throw it on top of chia pudding or coconut yogurt. Either way these are one delicious easy treat.
Healthy Chocolate Pecans (Paleo, Refined Sugar Free)
Ingredients
3 tbsp cacao
2 tbsp coconut oil melted
1/3 cup pecans
1 tsp maple syrup optional
Instructions
Combine the coconut oil and the cacao until there are no clumps.
If adding maple syrup, add it now to the chocolate, though I love it without it! It all depends on your preference.
Dip each pecan into the chocolate and set on a sheet of parchment paper.
Chill in fridge 15 minutes or until hardened. You can also chill them in the freezer if you want to speed up the process.
Shishito Peppers
When I am craving a snack, it is usually something salty. Shishito peppers are the perfect thing because you get some veggies in, but they are warm and salty. Plus, it is kind of like Russian roulette since 1/10 have a little kick.
Shishito Peppers (Paleo, Vegan, Whole 30)
Servings: 2
Ingredients
1 bag shishito peppers
1 tbsp avocado oil
pinch himalayan or sea salt
Instructions
Preheat oven to 400F.
Combine shishito peppers with avocado oil and salt.
Roast for 5-7 minutes. You might hear a popping sound!
Beet Hummus On Sweet Potato Toast
Sweet potato toasts are pretty much a staple in my fridge. They are one of the easiest things to just pop in the toaster and top. And lately, I have been loving to top it with beet hummus and a few greens if I have them on hand. I mean look at that color!
Beet Hummus (Paleo, Vegan)
Ingredients
1 cup cauliflower
1/2 cup beets cooked
2 tbsp tahini
2 cloves garlic
1/2 lemon juiced
Instructions
Combine all ingredients into a blender.
Blend until smooth.
And if you are new to making sweet potato toasts, I simply slice my sweet potato lengthwise and bake it at 400F for 20 minutes. I then store them in the fridge and pop them into the toaster as needed!
