This is a delicious healthy single serve fruit crisp that is the perfect paleo and vegan dessert! You can also switch up the fruit for the season.
What you’ll love about this healthy single serve fruit crisp is that the fruit can be changed up to whatever you like or whatever is in season. You could do strawberry, blueberry, rhubarb or peach! The added nuts in the topping give the perfect crunch and the vanilla adds the perfect note of flavour.
Healthy Single Serve Fruit Crisp (Paleo, Vegan)
Servings: 1
Ingredients
1/2 cup strawberries or other fruit of choice
1/2 tsp vanilla
1 tsp tapioca flour
3 tbsp almond flour
1 tbsp chopped nuts I did walnuts
1 tsp coconut sugar or monk fruit
1 tbsp coconut oil
Instructions
Preheat oven to 350F.
Combine strawberries (or fruit of choice) with vanilla and tapioca flour.
Add the fruit to an oven safe ramekin.
Combine the ingredients for the topping including almond flour, nuts, coconut sugar or monk fruit and coconut oil.
Add the topping on top of the fruit.
Bake for 25 minutes or until topping is golden and fruit is bubbling.
Allow to cool 5 minutes before enjoying.
