Healthy Pumpkin Spice Granola (Paleo, Vegan)

If you're a fan of pumpkin and granola, you will love this grain-free, healthy, pumpkin spice granola. It has all the flavor of Fall with just a touch of sweetness. You can change up the nuts to any that you like! Enjoy with coconut yogurt, chia pudding, or on its own. 



  • 1/4 cup pecans

  • 1/2 cup buckwheat groats

  • 1/2 cup sliced almonds 

  • 2 tbsp coconut oil 

  • 1 tbsp almond butter

  • 3 tbsp maple syrup

  • 1/2 tsp vanilla 

  • 1/2 tsp pumpkin spice 

  • 2 tbsp vanilla protein powder 

  • 2 tbsp ground flax

  • 2 tbsp pumpkin 


  1. Preheat the oven to 325F. 

  2. Combine coconut oil, almond butter, maple syrup, vanilla, pumpkin spice, protein powder, ground flax and pumpkin in a bowl. Stir until smooth 

  3. Add in your almonds, pecans and buckwheat groats (or nuts of choice). 

  4. Stir until coated. 

  5. Line a baking sheet with parchment paper or a silicone baking mat. 

  6. Bake for 15 minutes, stir, then bake for another 10 minutes. 

  7. Allow to fully cool before breaking off into clusters and store in an airtight container for up to 2 weeks.
