This healthy pumpkin chia parfait is the answer to your breakfast needs. Loaded with healthy fats, fiber and protein it not only satisfies but keep you full!
I have been on a pumpkin kick lately, and pumpkin is so great for you. Pumpkin is loaded with fiber, about 7g per cup, and fiber is the key to not only keeping you regular but also for stabilizing blood sugar. It is also loaded with vitamin A which is great for your immune system and for keeping your eyes, skin and bones healthy. Now let’s not forget that gorgeous color it gives, this is due to the carotenoids in it which are great antioxidants for our whole body.
Pumpkin Parfait Chia Pudding
1 can full-fat coconut milk
1/4 cup nut milk
5 tbsp chia seeds
1 cup pumpkin puree
1 tsp vanilla
1 tbsp maple syrup
1 tsp pumpkin spice
2 tbsp pecans
Start by making the chia pudding. Mix together chia seeds, coconut milk and nut milk.
Allow to thicken while you make the pumpkin portion.
Mix together pumpkin, pumpkin spice, vanilla and maple syrup.
Divide pumpkin into two mason jars.
Divide the chia pudding into the jars, you might have some leftover, save it for another day!
Top with pecans or any other desired toppings
