Healthy Mars Bars (Paleo, Vegan, GF)

This healthy mars bars is so delicious and easy to make, you won’t miss the original! Plus, it is paleo, vegan, gluten-free and dairy-free. 


These healthy mars bars are paleo, gluten free, dairy free, vegan and oh so delicious. They have the perfect layer of nougat, topped with caramel and enrobed in a layer of chocolate. What is even better is that they are easy to make and made with whole food ingredients. If you ask me, they taste even better than the original. I like making mini ones similar to the “fun size” you would get at halloween., but you could make full bars if you wanted to!

Healthy Mars Bar (Paleo, Vegan, GF, DF)

Ingredients

Caramel Filling

  1. 1 cup dates, soaked

  2. 2 tbsp almond butter

  3. 1 tsp vanilla

  4. pinch himalayan salt

Nougat

  1. 2/3 cup almond flour

  2. 1/4 cup caramel (from above)

Chocolate

  1. 3 tbsp cacao

  2. 2 tbsp coconut oil, melted

  3. 2 tsp maple syrup

Instructions

Soak your dates overnight in room temperature water or 1 hour in boiling water.

Make the caramel by blending all ingredients together until smooth. Scrapping down the sides as needed.

Take out 1/4 cup of the caramel and combine that with the almond flour to make the nougat layer.

Line a loaf pan with parchment paper and add in the nougat dough.

Press down firmly in an even layer.

Add caramel on top and spread it out using a spatula.

Freeze 3 hours or until firm.

Once firm, combine ingredients for paleo chocolate. Slice the bars into size of choice.

Dip each of the bars into the chocolate and place on a sheet of parchment paper.

Chill until chocolate is set, about 20 minutes.

Store in fridge or freezer.
