Healthy Mac and Cheese Recipe

Your favorite comfort food turned healthy in 15 minutes! It's creamy, dreamy, vegan, gluten-free and absolutely mind-blowing! This recipe is everything you've ever dreamt a healthy mac n cheese could be, so good that no one in your family will know the difference! For a paleo-friendly recipe - I used grain free pasta. Servings: 2-3 Servings


  • 1 tbsp coconut oil

  • 1/2 tsp smoked paprika

  • 1 tsp garlic powder

  • 8 oz box noodles

  • 1 pack of vegan mozzarella shreds (8oz)

  • 1 cup coconut milk

  • 2 tsp of tapioca starch in 2 tsp of water


  1. Add coconut oil and coconut milk to a saucepan on medium heat

  2. Add whole pack of vegan cheese and the smoked paprika

  3. Stir on medium heat until the cheese is melted

  4. While the cheese is melting down, add your box of macaroni to a pot of boiling water

  5. Add in your mixture of tapioca flour and water to the cheese mixture and stir

  6. Once the noodles are boiled, add them to the cheese mixture and stir until the cheese covers the noodles

  7. Serve and enjoy!
