Healthy Chocolate Chip Cookies

Cookie lovers rejoice because I've got you covered! I have taken the classic chocolate chip cookie and turned it into a healthy clean recipe you'll LOVE even more. Servings: 6-8 Cookies


Ingredients:

  • 1/4 cup coconut oil

  • 1/2 cup coconut sugar

  • 3 tbsp maple syrup

  • 1 tsp vanilla

  • 1 egg (can replace with a flax "egg" mixture)

  • 1 tsp apple cider vinegar

  • 3/4 cup almond flour

  • 1/3 cup tapioca flour

  • 1 tbsp psyllium husk

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 3 ounces chocolate chips (dairy free, i also use sugar free)


Instructions: 

  1. Add coconut oil to a bowl followed by your coconut sugar

  2. Then add in your maple syrup, vanilla and your egg (if using a flax "egg" instead allow the flax to gel to the consistency of an egg)

  3. Add in your apple cider vinegar and stir until fully combined

  4. Once smooth, add in your almond flour, tapioca flour, psyllium husk and baking powder

  5. Stir all of the ingredients together until it had formed into a dough mixture

  6. Fold in your chocolate chips and chill dough for 1 hour

  7. Once dough has been chilled scoop and place balls 1 inch apart on baking sheet

  8. Bake at 350 for 13 minutes, allow to fully cool after

  9. Enjoy!
