Breakfast, the most important meal of the day. And, if you’re like me, a big stack of blueberry pancakes can be the most delicious weekend breakfast. But, they are often filled with lots of sugar and simple carbs that will just give you a blood sugar spike. Hold on, there is good news, these healthy blueberry pancakes are the perfect weekend breakfast and the swirls of blueberry add the perfect sweetness and a dose of antioxidants.
Blueberry Pancakes (Gluten Free)

Servings: 1
Ingredients
1 cup blueberries
1 ripe banana
3/4 cup almond milk
1 1/2 cup brown rice flour
2 tsp baking powder
1 egg (or flax egg: 1 tbs ground flax with 3 tbs water)
1 tsp cinnamon
pinch salt
Instructions
Combine all ingredients, except blueberries, in food processor or blender.
Heat pan to medium heat and spray with coconut oil.
Using a 1/3 cup, spoon out batter onto heated pan. Add 5-7 blueberries to the middle.
Cook 3-4 minutes or until golden on underside.
Flip and cook for 1 minute.
Repeat with the rest of the batter
