Healthy Berry Thumbprint Cookies

The cookie that's both fruity, delicious and nutritious! I am so excited to share this berry thumbprint cookie with everyone. These are one of my all-time favorites. The cookies are great when you are looking for that extra burst of fruity flavor or looking for ways to use up the rest of any berries you have in your fridge/freezer! Servings: 6-8 Cookies


Ingredients:

  • 1 egg

  • 1/4 cup coconut oil

  • 1/4 cup maple syrup

  • 1 tsp vanilla

  • 1/4 cup coconut sugar

  • 1/4 tsp baking soda

  • 1 cup almond flour

  • 1/2 cup raspberries

  • 1 tbsp chia


Instructions: 

  1. Start by cooking (pan or microwave) your raspberries from frozen. Once heated add a tsp of chia seeds

  2. In a separate bowl, add vanilla, maple syrup, an egg and some unmeted coconut oil

  3. Add in your almond flour, baking soda and coconut sugar and being to mix your ingredients together

  4. once mixed begin to make golf-ball sized circles and use your knuckle or thumb to create an imprint/well in the middle of the cookie

  5. Fill each well with your jam mixture using the berry of your choice!

  6. Bake at 350 for 12 minutes

  7. Enjoy!
