Green Spinach Muffins (Gluten Free & Dairy Free)

It can be difficult to get your greens in, especially if you aren’t a big fan of the taste. These green spinach muffins are exactly what you need to help you get them in, and all their nutrients. I am all about getting the most out of what you are eating. By making food packed full of vitamins and minerals, stuff to just make you feel good, like these green spinach muffins.

Let’s get into the star of the show: Spinach.

Benefits Of Spinach

Spinach. High in niacin, zinc, folate, magnesium, and vitamins A,C,E and K. It is also full of flavonoids which is important because flavonoids act as antioxidants in the body to stop cholesterol from oxidizing in your body and forming free radicals. FYI free radicals cause damage in the body and lead to inflammation, chronic disease and more. The folate in spinach is also super important for your cardiovascular system, while the magnesium helps to lower blood pressure.

So all around, it is a great vegetable to sneak in whenever you can, I always add it to smoothies, but today we are adding it to muffins and making these green spinach muffins. Plus, it gives them a great green color without adding anything artificial.



Green Spinach Muffins

Servings: 8 muffins

Ingredients

  1. 1 cup oats

  2. 2 tbsp ground flaxseed

  3. 1 tsp baking powder

  4. pinch salt

  5. 1/2 tsp cinnamon

  6. 1/4 cup coconut sugar

  7. 1/4 cup unsweetened almond milk

  8. 1 cup spinach

  9. 2 tbsp coconut oil

  10. 1/2 cup applesauce

  11. 1 tbsp chia seeds with 3 tbs water

  12. 1 tsp vanilla extract

Instructions

Make a chia egg by combining chia seeds and water.

Add oats, flax seed, baking powder, baking soda, salt and coconut sugar to a blender or food processor and blend until flour consistency.

Empty dry ingredients into a bowl.

Add almond milk, spinach, vanilla and coconut oil and applesauce to food processor or blender and blend until smooth.

Add wet ingredients to dry and fold until combined.

Bake at 375F for 20-25 minutes of until toothpick comes out clean.
