Sweet Potato Pizza
If you’re looking for a simple, plant-based pizza crust look no further. This paleo pizza crust is easy to make and freezer friendly too. Load up on your favorite toppings and you will be good to go!
Sweet Potato Pizza Crust
Ingredients
1 cup sweet potato, mashed
1/4 cup coconut flour
2 tbsp tapioca flour
1 tsp garlic powder
1 tsp oregano
Instructions
Preheat oven to 400F.
Combine all ingredients together and mix until smooth.
Take the dough and flatten into a round pizza crust shape.
Top with desired toppings. I used pesto, cashew cream, mushrooms, onions, basil, kale and cherry tomatoes.
Bake for 15 minutes.
Loaded Sweet Potato Fries
This might be my new favorite recipe. They are super easy to make and feels like you are indulging when you are loading up on healthy, good for you food.
Loaded Sweet Potato Fries
Ingredients
1 sweet potato
1 tbsp avocado oil
1/4 cup green chickpeas
5 cherry tomatoes
2 tbsp parsley
Garlic Sauce
2 tbsp tahini
juice half lemon
1 clove garlic
Instructions
Preheat oven to 400F.
Slice sweet potato into french fries.
Toss sweet potato in avocado oil.
Lay on a baking sheet either with a silicone mat or greased with avocado oil.
Put in the oven for 25 minutes, tossing halfway through.
While sweet potatoes are in the oven make the garlic sauce.
Assemble the ingredients for the garlic sauce, if needed add water to thin to desired consistency, 1 teaspoon at a time.
When fries are done top with garlic sauce, tomatoes, green chickpeas and parsley.
