I am all for healthy recipes that taste good. And this chocolate peanut butter chia pudding not only tastes good but tastes AMAZING! One of my favourite desserts growing up (and now) are peanut butter cups, and this is a way of getting those same flavours with a nutritional boost. Plus, there are few better combos than chocolate and peanut butter.
If you want to know the 411 on chia seeds, I wrote a full post on it here. But basically, it adds fiber, omega-3’s and helps keep you fuller, longer. And for someone that gets hungry really frequently, I am a big fan.
You can eat this chocolate peanut butter chia pudding for breakfast or dessert. Plus, you can double or even triple the recipe to have this pudding on hand for your sweet tooth at night. The healthy fats from the nuts will also help stabilize your blood sugar and help you sleep better, so basically, it’s chocolate peanut butter pudding that helps you sleep. Sign me up.
Chocolate Peanut butter Chia Pudding

Ingredients
3 tbsp chia seeds
3/4 cup almond milk
1 tbsp cocoa powder
1 tsp honey
1/2 banana
2 tsp peanut butter
1 tbsp dairy free chocolate chips
2 tbsp canned coconut milk, thick part (optional)
Instructions
Combine chia seeds, cocoa and almond milk into a mason jar.
Refrigerate overnight.
In the morning top it with sliced banana, dairy free chocolate chips and peanut butter.
Optional: whip coconut milk until it forms a cream using either a whisk or electric mixer.
This is so tasty, yet its made with real ingredients and low in sugar! Enjoy 🙂
