Asian Style Paleo Chicken Meatballs

I love bowls that are quick, easy and loaded with veggies. These paleo chicken meatballs have an easy to make sauce that is full of clean ingredients, while still being full of flavour. Plus, you can change up the veggies to whatever you have or what is in season, and you are good to go.

What You’ll Need

Coconut Aminos. It is soy free and gluten free plus loaded with B vitamins.

Fish Sauce. Full of iodine that nourishes the thyroid as well as Vitamin A and D.

Almond Butter. Loaded with Vitamin E and is lower on the glycemic index than peanut butter.

Ginger. Loaded with magnesium which helps with blood flow and is great for digestion.

Ground Chicken. Or ground turkey or beef. Always go for antibiotic free and grass-fed.

Garlic. Great at lowering cholesterol and helps to regulate blood sugar.

Veggies. I used what I had in my fridge so pick some of your favorites!

Ingredients

  1. 2 cups cooked veggies of choice

  2. 100 grams ground chicken

  3. 1 tsp garlic powder

Sauce

  1. 2 tbsp coconut aminos

  2. 2 dashes fish sauce

  3. 1 tbsp almond butter

  4. 1 tsp ground ginger

Instructions

Combine ground chicken and garlic powder in a bowl.

Form small balls with the ground chicken with your hands.

Heat a cast iron pan to medium heat and spray with avocado oil.

Add meatballs and cook until brown on each side and cooked through (about 8 minutes).

While meatballs are cooking whisk together ingredients for the sauce and cook your veggies.

Add the sauce to the meatballs until heated.

Serve on top of cooked veggies and enjoy!
