Paleo Collagen Pancakes

Since it is gut health week over on Instagram, I thought it would be perfect to share these paleo collagen pancakes that are great for the gut and for the soul. They have all the deliciousness of pancakes while rebuilding the gut at the same time.

There is no gluten, grains or refined sugar in this recipe, which means it won’t cause inflammation or damage the gut. Even better, they are filled with ingredients that will nourish your gut and make it happy. And happy gut, happy life am I right?


What You’ll Need

Coconut Flour. Full of fiber that feeds probiotics and helps them thrive.

Baking Soda. Helps things pass through the gut, preventing and relieving constipation.

Himalayan Salt. Full of 84 essential minerals and balances the pH in your body.

Coconut Milk. Nourishes the digestive lining and improves gut health.

Coconut Oil. A medium chain triglyceride that helps to rebuild the gut.

Eggs. Full of amino acids that improve digestion.

Collagen. Basically “heals and seals” the gut. It boosts gastric juices and restores the gut lining.

Vanilla. Anti-inflammatory and great antioxidant.




Paleo Collagen Pancakes

Ingredients

  1. 1/4 cup coconut flour

  2. 1/8 tsp baking soda

  3. 1/4 cup coconut milk

  4. 2 tbsp coconut oil

  5. 2 scoops collagen peptides

  6. 3 eggs (or flax eggs)

  7. 1/2 tsp vanilla

  8. Pinch himalayan salt

Instructions

Combine all dry ingredients in a bowl.

Combine all wet ingredients in a separate bowl.

Add dry ingredients to wet and mix until combined.

Heat pan to medium heat and spray with either avocado or coconut oil.

Using a 1/4 cup measurement scoop out batter and cook until underside is golden.

Flip and cook for another 30 seconds.

Top with raspberries, nuts and coconut yogurt.
