Healthy Soft Pretzels (Paleo)

Healthy Soft Pretzels. Yup, you heard right. These are soft and pillowy and feel just like your traditional pretzel. Plus, they are paleo, easy to make and you only need 7 ingredients.

I love making healthy versions of the traditional not so good for you foods. There is no reason to give up the recipes you love when you can make tweaks to make them more nourishing and better for you. These taste delicious with the Everything But The Bagel Spice but can also be made sweet with some cinnamon and coconut sugar. They key to the perfect pretzel texture is boiling before baking, this goes for bagels too. Once they are done you can have them on their own, with nut butter, or mustard.

Healthy Soft Pretzels (Paleo)

Servings: 3

Ingredients

  1. 1/4 cup cassava flour

  2. 1/4 cup tapioca flour

  3. 1 egg

  4. 1 tbsp coconut oil, melted

  5. 1 tsp apple cider vinegar

  6. Pinch himalayan salt

  7. 1/4 tsp baking powder

  8. Sprinkle everything bagel seasoning

Instructions

Preheat oven to 400F.

Combine cassava flour, tapioca flour, egg and coconut oil. Mix until combined.

Add in apple cider vinegar and baking soda. Fold in until combined, careful not to overmix.

Separate dough into 3 even chunks.

Roll out each into a long even snake.

Make pretzel shape with dough by crossing the ends away from you, twisting, and folding back on itself.

Bring a pot of water to a boil with salt.

Add each pretzel into the boiling water for 1 minute.

Remove and place on baking sheet.

Sprinkle with seasoning. Can also do plain salt here, cinnamon coconut sugar or seeds.

Bake for 20 minutes or until golden.
