Cookie Butter Cups : The Perfect After Dinner Treat

Sometimes you just want a little something sweet after dinner, enter cookie butter cups. I was inspired to create these because of the Speculoos Cookie Butter from Trader Joe’s. That cookie butter is oh so yummy, but not so good for you. So I made my own that you can use in place of that and also made it into some yummy cookie butter cups.

It smells like cookie butter, it tastes like cookie butter, but it is full of good for you ingredients.

What You’ll Need

Sunflower Seed Butter. Gives you a healthy dose of protein and is loaded with vitamin E. Vitamin E will help fight free radicals and increase immunity. Plus, sunflower seeds are loaded with magnesium which will help you sleep by reducing tension in your body. See, I told you it was perfect after dinner.

Cinnamon. This will help keep your blood sugar stable and is also a great anti-inflammatory.

Pumpkin Spice. Loaded with spices like allspice and clove, which have potent antioxidants, and nutmeg which helps you sleep by stimulating the release of serotonin.

Maple Syrup. Full of antioxidants and boosts the immune system, plus it is an unrefined sweetener.




Ingredients

  1. 1 cup sunflower seed butter

  2. 1 tsp cinnamon

  3. 1 tsp pumpkin spice

  4. 2 tbsp maple syrup

Cookie Butter Cups

  1. 1/2 cup dairy free chocolate chips (melted)

  2. 6 tbsp cookie butter

Instructions

Combine all ingredients for cookie butter in a food processor or by hand.

Melt dairy-free chocolate chips in the microwave in 30-second increments.

Place a small spoonful of melted chocolate into a silicone mold.

Place a spoonful of the cookie butter on top of the chocolate and press down.

Top with another small spoonful of chocolate.

Sprinkle a tiny bit of sea salt on the top (optional).

Place in freezer to harden, about 30 minutes.
