3 Ingredient Almond Butter Cookies (healthy, paleo)

These 3 ingredient almond butter cookies are quick to whip up while being healthy, paleo, gluten free and refined sugar free! A great cookie staple.


What you’ll love about these cookies are that they are only 3-ingredients, and chances are you already have all of them! They come together super quick so they are perfect for when that cookie craving hits. Plus, they are full of healthy fats and fiber, which makes them super satisfying.

What is also great is you can switch up the almond butter for any nut or seed butter. Think pumpkin seed butter, sunflower seed butter, cashew butter, pecan butter. There are so many tasty possibilities.

3 Ingredient Almond Butter Cookies

Ingredients

  1. 1/2 cup almond butter

  2. 1 egg

  3. 3 tbsp coconut sugar

Instructions

Preheat oven to 350F.

Combine all ingredients into a bowl and mix until combined.

Bake for 12-14 minutes or until edges are set.

Allow to cool for 5 minutes before enjoying.

Optional: Sprinkle sea salt on top when you remove them from the oven.
